Arugula with Lemon and Olive Oil

The best salads are really kept simple. Take for instance this arugula salad dressed with lemon, olive oil and a little salt and pepper.

INGREDIENTS:

  • 16 ounces of arugula
  • 1 lemon, juiced
  • 2 tablespoons of extra virgin olive oil
  • sea salt, to taste
  • pepper, to taste

DIRECTIONS:

  1. Add the arugula to a bowl. Squeeze one juice of lemon with olive oil, salt and pepper. Mix.
