Homemade Chicken Soup

INGREDIENTS:

  • 2 quarts homemade chicken stock
  • 2 cups chicken meat, shredded
  • 1 medium onion, chopped
  • 1.5 pounds of carrots, chopped
  • 2 cups of celery, chopped
  • handful of thyme leaves
  • sea salt, to taste
  • pepper, to taste
  • 3 cloves of garlic
  • handful of parsley leaves
  • bay leaf*
 

DIRECTIONS:

  1. Pour in your homemade chicken stock
  2. Put in the chopped onion, chopped carrots, thyme, garlic, bay leaf, and salt and pepper. Add chicken meat. Season how you like it. (I often add some paprika, dried red pepper, cumin and celery seeds for a little more flavor).
  3. Cook over medium heat for 20 minutes. Then add celery and parsley. Cook for another 15 minutes.
