Roasted Potatoes and Dill

If you’re cutting out all starches from your sugar detox meals, then steer clear of potatoes. But given potatoes are a staple in the Northeast during the fall and winter months, they are a good solution, especially when roasted whole (and not turned into a French fry!)
- 1 pound of potatoes
- 2 tablespoons of extra virgin olive oil
- sea salt, to taste
- pepper, to taste
- handful of fresh dill
- Preheat oven to 450°F. Place potatoes in a large roasting pan and toss with oil, salt and pepper until evenly coated. Spread potatoes in a single layer so they cook evenly.
- Bake for 20 minutes, stirring occasionally. Dress with dill. Serve immediately.
