Wild Mustard Green and Microgreen Chioggia Beet Salad

Salads are intensely easy to prepare but it’s nice to switch it up a bit by adding some color and whole fruit.

INGREDIENTS:

Salad
  • 1 cup microgreens 
  • 1 cup of wild mustard greens
  • handful of raspberries
  • 1 hard-boiled egg
  • 1 Chioggia beet, match-sticked
  • 1/3 cup of crushed walnuts
Dressing
  • 1 tablespoon of sherry vinegar
  • 3-4 raspberries
  • 1/2 tablespoon of olive oil
  • sea salt, to taste
  • pepper, to taste

DIRECTIONS:

  • Place all salad ingredients in a bowl
  • Put ingredients for salad dressing in a closed mason jar, shake vigorously and drizzle over the top of the salad
